Ingredients
8 servings
1pumpkin
small
1potato
1sweet potato
small
2onions
diced
3 tablespoonolive oil
4 cupswater
hot
250mlmilk
1vegetable stock cube
2green apples
small, peeled and seeded
½ teaspoonground cumin
1 pinchground chili pepper
2cloves garlic
1 tablespoonpaprika
¼ teaspoondried sage
or 1 sprig fresh sage
½ teaspoondried thyme
or 1 teaspoon fresh thyme
1cinnamon stick
or 1/4 teaspoon ground cinnamon
½ tspsalt
freshly ground pepper
30mllow fat yogurt
for serving
Instructions
Step 1
1. Chop the vegetables coarsely.
Step 2
2. Dissolve stock cube into hot water.
Step 3
3. Add olive oil in a large pot over medium heat and sauté the onions. Add the garlic. Cook for 3 minutes
Step 4
4. Add the ground chilli pepper, cumin, paprika and stir for one minute.
Step 5
5. Add broth and mix well.
Step 6
6. Add all remaining ingredients. Cover and cook over medium heat for 30 minutes
Step 7
7. Remove cinnamon stick and mix with hand blender or blender.
Step 8
8. Serve with a small swirl of yogurt.
