Instructions
Step 1
Chop rhubarb into bite-sized pieces and stir together with sugar. Leave overnight in fridge. In the morning, stir the mixture to evenly coat the sugar and liquids onto the rhubarb.
Step 2
When ready to cook, drain the juices into a sauce pan and mix in eggs and corn starch. Cook over medium heat until thickened.
Step 3
Mix rhubarb back in to sauce and pour into oven-safe bowl.
Step 4
Bake at 350 degrees for 30-40 minutes.
