Instructions
Step 1
While the vegetables are cooking, make the couscous add the couscous to a bowl. Pour over the hot water, cover and set aside.
Step 2
Make the dressing by adding all of the into a jar or bowl. Shake or whisk to combine.
Step 3
To serve – fluff up the couscous with a fork. Share between serving dishes. Top with the roasted vegetables. Pour over the dressing. Finish by sprinkling over the capers and preserved lemons. Enjoy 😊
