Blend with a stick blender or traditional blender. Pour into the prepared pan and sprinkle the top with the cinnamon. Bake for 25-30 minutes until puffed and cooked through. Allow cooling before attempting to remove the egg loaf from the pa and slicing it. If it is too warm, it will break easily.

Cut the egg loaf into a french toast stick shape. Preheat a skillet over medium heat until hot. Add one tablespoon of butter at a time. Add ⅓ of the egg loaf sticks to the pan and cook them on the first side for about 1 minute. Be sure to turn the heat down a little, so they do not get too browned. Flip and repeat on the other side until lightly golden brown.
