Step 1
In a bowl squeeze the sausage meat out of the casings. Add chili flakes, salt, and pepper. Mix well and form the mixture into a circular patty.
Step 2
Heat a non-stick frying pan over medium heat with a drizzle of oil. Fry the sausage patty for 4 minutes on each side until golden brown and slightly crispy. Set aside.
Step 3
In another pan, sauté sliced red onions in oil for 5 minutes. Add balsamic vinegar and cook for another 2 minutes until caramelised. Set aside.
Step 4
Crack 3 eggs into a bowl and whisk. Heat the same pan as you cooked your onions in over low heat, add butter, and pour in the eggs. Gently scramble, adding spring onions, salt, and pepper. Set aside while eggs are slightly runny. If you like hard or dry scrambled eggs, then you want to cook the eggs all the way through.
Step 5
Lightly toast the brioche buns. Start assembling with the bottom bun, followed by a layer of mayo and ketchup. Add the sausage patty, a spoonful of scrambled eggs shaped using a 1/2 cup measuring cup, cheese, and caramelised red onions. Top with the remaining bun. Serve up and enjoy!
