Ingredients

2 poundsbeef chuck roast
cut into 1-inch cubes
⅓ cupall-purpose flour
1onion
large, chopped
3garlic cloves
minced
4 cupsbeef broth
3potatoes
medium, chopped
2carrots
medium, peeled and cut into 1-inch pieces
2parsnips
medium, peeled and cut into 1-inch pieces
1 Tbspdried thyme
2 tspsalt
1 tsppepper
1 tspworcestershire sauce
1 cupfrozen peas
1 Tbspall-purpose flour
for slurry
2 Tbspwater
Instructions
Step 1
Heat a large skillet over medium heat on the stovetop. As it warms, toss the cut beef with 1/3 cup flour either in a mixing bowl or sealed bag.
Step 2
Once the skillet is hot, add 2 tablespoons of olive oil and brown the meat. Once browned on each side, transfer to the slow cooker.
Step 3
In the same skillet, saute onion and garlic for 1-2 minutes. Add to the slow cooker along with the beef broth, potatoes, carrots, parsnips, seasoning, and Worcestershire sauce.
Step 4
Cook the stew on low for 8-10 hours. At the last half hour, stir in the frozen peas and flour slurry.
Step 5
Place the lid back on and let continue cooking for 30 minutes.
Step 6
Serve warm and enjoy!
