Step 1
In your wok (any pan or skillet will work), heat a tablespoon of avocado oil over medium high heat.

Add the chopped onion and peppers to the wok.

At this point, if you want to add any other veggies like Brussels, green beans, snow peas, you can throw them in too.

Stir the veggies frequently until the onions are caramelized, about 10 minutes.

Add the garlic and chicken and cook for a few minutes.

Add the sesame oil, soy sauce, agave nectar, fish sauce, and ginger.
Step 7
Continue to cook for few minutes until the chicken is cooked through.
Step 8
Add the sweet potato noodles.
Step 9
Toss them frequently with tongs for about 5 minutes until softened but still crunchy.
Step 10
Top with cashews, chopped mint, and sesame seeds.
