1 heaped tbspfresh coriander stalks
you can use the leaves for garnish later

1 ½ tspturmeric

½ tspcumin

½ tsppaprika

1 tsptamarind paste

200mlfull-fat coconut milk

1 tspfish sauce

200mlchicken stock
or seafood

2 x 140gcod fillets
or haddock, or any firm-fleshed white fish, skin removed

200gdried rice noodles
or 300g-400g of ready-cooked vermicelli noodles

12king prawns
peeled and deveined

200gbeansprouts
mung bean sprouts

1 tsprice wine vinegar

1 tspcaster sugar
superfine sugar

1red chilli
chopped finely

1 piececucumber
finger sized, chopped finely

0.25red onion
small, peeled and chopped finely

coriander
chopped, cilantro
