Fluffy Pumpkin Pancakes

We made pancakes and waffles from the batter. My kinds and I loved them! I also added about 1 tsp of vanilla to the mix.

The batter was too thick! By the time the insides were no longer gooey, the outsides were too dark. I added more and then again more milk and finally got a few pancakes that were edible. Nothing amazing about the flavor. I’ll keep looking for another recipe.

AMAZING!! So fluffy and perfectly pumpkin-y. You may have to cook the pancake a little longer than golden brown because of how thick they are. Would be amazing with chocolate as well, and if you want a sweeter pancake add more sugar, as the regular recipe isn't too sweet, but with syrup it's perfect.

Just an inspiration recipe. Used Bisquick instead of making my own mix, pumpkin, pumpkin pie spice, a pinch of brown sugar, milk and egg. It was a thick batter but still turned out a good pancake consistency.

Added protein powder and that made batter a little thicker. Very moist and tasty.

Subbed 1/2 tsp nutmeg and 1 tsp cardomom for pumpkin pie spice and added 1 tsp vanilla extract and a tablespoon of ground flax seed. I made a batch to stash in the freezer for a quick homemade breakfast during the week. 👍

Very good! Just added 2 extra tablespoons of brown sugar and a tad bit more milk to make the batter thinner to make more pancakes! But overall it was really good.
