AMAZING!! So fluffy and perfectly pumpkin-y. You may have to cook the pancake a little longer than golden brown because of how thick they are. Would be amazing with chocolate as well, and if you want a sweeter pancake add more sugar, as the regular recipe isn't too sweet, but with syrup it's perfect.
