Instructions
Step 1
In a medium bowl, mix together your dry ingredients.

Make a well in the center and crack the egg in, begin whisking, add your starter, dairy and fat.

Whisk until just combined.

Preheat a griddle or any available frying pan.
Step 5
Over medium heat, add a tablespoon of preferred fat and melt.
Step 6
Using a ladle/spoon/ice cream scoop, portion pancakes onto hot pan.

Let cook over medium heat until the batter on top has lost its wet sheen and its risen a tad (about 3-5), flip and cook another 2-4 minutes.

Serve with butter, maple syrup and some flaky sea salt if you have it. Also, great with toasted coconut on top and sliced bananas.
