Ingredients: 2.5 pounds beef chuck, cubed (purchasing 2.5 pounds of beef chuck will result in approximately 1.5 pounds when all trimmed, cut up, and cubed); 1 teaspoon garlic powder; 1 teaspoon onion powder; 1 teaspoon smoked paprika; 2 tablespoons all-purpose seasoning; 1 teaspoon Salt and fresh black pepper to taste; 6 whole pimento seeds (crushed); 1 teaspoon soy sauce; 1 teaspoon browning (you may need more during the cooking process.); 2 tablespoons custom seasoning blend; 2-3 tablespoons all-purpose flour (Adding the all-purpose flour will allow the beef to form that beautiful crust when searing in the instant pot.); 2 tablespoons vegetable oil + 1 teaspoon; 1 large onion, peeled, sliced & divided, (approximately 1/2 cups), half to sauté & half for later in the cooking process); 2 cloves fresh garlic, minced; 3 whole carrots washed, peeled, and chopped in rounds; 4 ounces tomato puree (or 8 ounces tomato sauce); 3 cups dry red wine; 2 1/2 cups chicken broth (or beef broth); 1 bottle Guinness Extra Stout beer (11.5 ounces); 6 sprigs fresh thyme; 2 stalks scallion, crushed; 1/4 cup bell peppers; 1 whole scotch bonnet pepper; 1 tablespoon brown sugar (optional); 1 tablespoons oyster sauce; 2 teaspoons Worcestershire sauce; 2 tablespoons butter; parsley to garnish
