Ingredients
4 servings
1 x 15 ozcan black beans
rinsed and drained
2 cupsbell pepper
diced, red, orange, yellow or a mixture
1mango
alphon, diced, sub any other mango variety
1avocado
diced
1 cupred onion
diced
½ cuproasted cashews
chopped
½ cupcilantro
chopped
1jalapeño
seeded and minced, optional but recommend
¼ cuplime juice
1 Tbspmaple syrup
3 tspchili powder
1 tspflakey salt
sub 1/2 tsp sea salt
2 Tbspdairy free cream cheese
Instructions
Step 1
To a large bowl, add in to rinsed and drained black beans, diced bell pepper, mango, red onion, avocado, cashews, jalapeño and cilantro.
Step 2
To a personal blender, add in all ingredients for the "creamy chili lime dressing" and blend until smooth. Alternatively, add to a bowl and mix until completely smooth.
Step 3
Add dressing to the bowl of "cowgirl caviar" and combined until well mixed.
Step 4
Enjoy with chips, quinoa or rice!
