Doubled the recipe and used 3 green bell peppers and 3 large red bell peppers. Used 1 cup of dry rice cooked and about 1 1/4 lb of ground beef. I also used a 30 oz can of whole Italian tomatoes. I cooked it for 15 min then added pecorino romana cheese on top and cooked for a additional 15 min
