Seriously the best veggie lasagna! This lasagna recipe is packed with bell pepper, zucchini and carrots, sautéed until golden and tender on the edges. Recipe yields one 9-inch lasagna, enough for 8 slices.

Update: made again and packed the casserole dish too high, and was unable to add the last noodles and tomato layer and cheese. It still tasted delicious but the noodles didn’t quite cook all the way (truly leaving it after it comes out of the oven for 15 minutes is mandatory; I have a feeling the noodles would have been more edible had I waited, but I was hungry and it was late). I did use a blender to blend the cup of cottage cheese and some milk, then added the sautéed veggies which got a little more pulverized than I meant to, and then added the rest of the cottage cheese to the skillet. I didn’t do any blending of the marinara sauce. It was tasty but I could have used two dishes instead of one since it dribbled over and burned my oven. This is one of my go to dishes but it does take longer than I anticipate. I’m slow at cutting so 15 minutes of chopping, 15 minutes to prepare cottage cheese and veggie blended madness, 18-20 mins covered, 15 or so mins without the foil, and a good solid 15 minutes to solidify and cool. So a good hour and 15 at least total. Husband said it was “hearty but not heavy.” Big win! Pretty easy and quick using marinara sauce and ready to cook noodles. I don’t have a food processor so I used my nutribullet for the cottage cheese and a bit of the marinara; otherwise I leave the veggies as they are. Very hearty and tasty. Husband gets skeeved out by cottage cheese but loves this dish. Topped with a bit of Parmesan.
