A quick and easy tofu curry recipe where the blender does most of the work! This is the curry I make when I have a craving for vegan butter chicken or tofu makhani but want to eat as quickly as possible. Serve the tofu curry with steamed basmati rice, roti or vegan naan and take the rest of the day off from cooking!

or use 1-inch knob of ginger and six cloves garlic Add to blender without chopping
2 tablespoonsraw cashews
use pumpkin seeds for a nut-free version
1 Tbspground coriander
1 tspground cumin
½ tspturmeric
½ tspKashmiri chilli powder
or paprika, the color of the chili powder will make the curry darker or lighter
1 Tbspgaram masala
2 tbspskasoori methi
dried fenugreek leaves
1 tspsugar
1 tspavocado oil
or any neutral oil
14 ozsuper-firm tofu
high-protein tofu
1 ½ cupsvegetable stock
or mushroom stock or water
salt
to taste
2 Tbspvegan butter
2 Tbspcilantro
