Cashew Dressing
1can chickpeas
drained and rinsed
½ cupsunflower seeds
2 Tbsphemp seeds
optional
2 Tbspsesame seeds
unhulled, I did a mix of white hulled, unhulled, and black
3cloves garlic
fresh parsley
fresh cilantro
0.5red onion
small, chopped
1 tspground cumin
½ tspsea salt
¼ tspblack pepper
2 Tbsptahini
2 tspolive oil
or coconut oil
2 Tbspflour
I used buckwheat flour
1 cupquinoa
cooked and cooled, you will have leftovers but that's always a good thing
4 cupsromaine lettuce
or whatever and however much greens you want
1cucumber
diced
1 cupcherry tomatoes
halved or cut into quarters
black beans
optional, I had leftover beans and salsa so I decided to mix them together and it worked out great
