One Skillet Mexican Rice Casserole
Made this for my vegetarian daughter. Very tasty. Both my husband and I enjoyed it cooled over a salad. My daughter had it on its own. We were waiting for her to return home for dinner so the ingredients lingered in the skillet longer than usual and it tasted even better. Will definitely make this again and take the time to add the rice and melted cheese on top.
