Fattoush Salad has cucumbers, tomatoes, herbs, and toasted low-carb pita chips, and it's flavored with lemon juice and Sumac. When I have garden cucumbers, tomatoes, and fresh herbs, I make this Lebanese salad over and over!

', Oat Bran, cut into strips about 3/4 inch wide, then toasted and crumbled
2 headsromaine lettuce
chopped
½ cupgreen onion
thinly sliced
1 cuptomatoes
diced, let drain a minute or two if extra juicy
1 cupcucumber
diced, same size as tomatoes
½ cupfresh mint leaves
coarsely chopped
½ cupflat-leaf parsley
coarsely chopped, leaves only, no stems
1 tspgarlic
chopped
1 tspsalt
I used fine grind sea salt
½ cuplemon juice
fresh squeezed, I love lemon, so adjust the amount to your own taste
1 tsppowdered Sumac
plus more for sprinkling on individual salads if desired
½ cupextra virgin olive oil
