Ingredients
4 servings
1red bell pepper
cut in strips
2 tablespoonsolive oil
14 oztofu
extra firm, drained and excess water squeezed out using tea towel or cheese cloth
2garlic cloves
crushed
1 ½ teaspoonchipotle chili powder
1 teaspooncumin
¼ teaspoonsea salt
0.5red onion
cut in thin strips
4 ozcrumbled goat cheese
4tortillas
cilantro
salsa
optional for serving
Instructions
Step 1
Sauté the bell pepper strips in olive oil over medium high heat.
Step 2
Continue to cook until reduced and softened, about 7 minutes.
Step 3
Transfer the peppers to a bowl.
Step 4
Add crumbled tofu to the pan and cook, stirring occasionally until things brown up, about 4 minutes.
Step 5
Add an additional tablespoon of oil if needed.
Step 6
Add the garlic, chili powder, cumin, and sea salt.
Step 7
On each tortilla, scoop tofu mixture.
Step 8
Top with the sautéd peppers, sliced onion, and crumbled goat cheese.
Step 9
Serve with salsa and chopped cilantro!
