This Mexican Chicken and Rice Casserole is probably one of my favorite easy weeknight dishes to make. It's loaded with flavor and can feed a crowd. If you don't have a crowd to feed, this makes great leftovers through out the week!

jar medium, You can use a more mild Salsa or more spicy, depending on what you prefer

1 cupfrozen corn

1 x 15 ozcan black beans
drained and rinsed

¼ cupfresh cilantro
chopped

½ tspcumin powder

½ tspchili powder

¼ tspsea salt

¼ tspblack pepper

1 ¼ cupsshredded mexican cheese blend

2 Tbscoconut oil

1Avocado
pitted, skin removed and diced

1tomato
diced

1lime
cut into wedges

sour cream
Add any other topping you prefer, more, etc
