Here's a pasta to put a spell on you. The flavors of the Big Easy come together in this rich, spicy and VERY cheesy pasta dish inspired by Creole and Cajun flavors alike. It's almost like a Nola Lasagna but without all the hard work.

Ingredients

¼ cupextra virgin olive oil

1 lbground beef
or ground veal, pork or turkey

1 lbandouille sausage
sliced in 1′′ pieces and quartered

1red onion
diced

1green bell pepper
diced

2 stalkscelery
diced

1 Tbspcrushed garlic

1 cupbeer
basic, such as ribbon or budweiser, try not to use an ipa as it can make it bitter
2 cupsham broth
or chicken, i used 2 tsp of ham better than bouillon + 2 cups of water, use 3 cups if you don’t wish to use beer

28 ozcan of crushed tomatoes

1 ½ Tbspcreole seasoning
or you can use any cajun/louisiana-style seasoning

1 tspblack pepper

1 tspseasoned salt

1 tspsugar

1 tspgarlic powder

1 tsponion powder

1 tspitalian seasoning

1 tsporegano

10 ozfrozen okra
optional

1 lbcavatappi
or cellentani, the kind that looks like if macaroni and a pig tail had a baby

6 ozcan of tomato paste

2eggs
beaten

2 cupsricotta cheese
i used part-skim

1 cupparmesan cheese
grated

2 cupscheddar and monterey jack cheese

¼ tspcrushed red pepper flakes
optional for a spice kick

1 tsptabasco sauce
optional for a spice kick
