Boil your chosen pasta in salted water until it reaches an "al dente" texture. Before draining the pasta, reserve about 1/3 cup of the pasta cooking water. Drain the pasta and set it aside.

Heat olive oil in a large skillet over medium heat. Add the chopped onion and sliced mushrooms. Sauté until the onions become translucent, and the mushrooms turn lightly browned and tender.

Stir in the chopped spinach and continue cooking for about 5-8 minutes, allowing it to wilt and soften.

Season the mixture with salt, paprika, and black pepper. Adjust the seasonings according to your taste. Create the Creamy Sauce: Pour in the whipping cream and milk, and stir well to combine. Let the mixture simmer for a few minutes until the sauce thickens slightly.

Gradually add the grated Mozzarella cheese to the sauce. Stir until the cheese is completely melted and the sauce becomes smooth.

Add the cooked pasta to the creamy mushroom and spinach sauce. If needed, use the reserved pasta cooking water to adjust the sauce's consistency. Stir to ensure the pasta is well coated with the sauce.

Allow the pasta to simmer in the sauce for a few more minutes. This will help the pasta absorb the flavors and thicken the sauce.
