1 ½ cupsonion
diced

2cloves garlic

2 cupslow-sodium chicken broth

1 x 10 ozcan diced tomatoes

8 ozdry pasta
small pasta

½ cupmilk
or heavy cream

½ tspsalt

½ tsppepper

1 cupshredded cheddar cheese

Super good, I doubled the pasta I used (but granted I did use boxed kraft macaroni cause those were the noodles I had) but it was so easy and so delicious
Update: 3/5/22, I made this again and it turned out delicious again. This time I did use a can of petite diced tomatoes. Still no onions. Since my package of pasta was 16oz, I did an extra 1 1/4 cups of stock and a cup of extra heavy cream. This was crazy delicious. Definitely a go to meal. Oh and I obviously added sweet peas. No scallions for us. Sooooo good.
This was creamy and delicious or as my children said, sublime. A couple changes: the kids hate onions so none of those, I didn’t have the canned tomatoes so I had to substitute some jar sauce which I diluted down. I also added an extra cup of chicken stock and 1/2 cup extra of heavy cream because I used a 16oz package of pasta. It really was easy and delicious.
