Instructions

Step 1
Slice your beef into 1/4" strips against the grain for maximum tenderness.
Step 2
Marinate beef strips with baking soda, oyster sauce, salt, oil, and cornstarch. Set aside for 15 minutes.
Step 3
In a small bowl, mix together your sauce by combining light soy, dark soy, oyster sauce, sugar, white pepper, sesame oil, msg, and warm chicken stock (this will help dissolve the sugar). This will be your sauce. Set aside.
Step 4
Mix 1 1/2 tbsp cornstarch and 1 1/2 tbsp water - this will be your cornstarch slurry. Set aside.
Step 5
Bring a pot of water to boil and blanch your broccoli 30 seconds; drain and set aside.
Step 6
Add about 4 tbsp of neutral oil to a hot pan. Sear marinated beef strips over high heat for 2-3 minutes. Remove and set aside.
Step 7
In the same pan and oil, fry ginger and and garlic for 15 seconds and deglaze with Shaoxing wine. Add in your premixed sauce and stir over medium high heat. Bring to a boil and reduce slightly for about 2-3 minutes.
Step 8
Add slurry to thicken. Add back cooked beef and blanched broccoli. Stir to combine and serve with rice!
