Instructions
Step 1
Soak the glass noodles in water and set them aside (I also put dried shiitake mushrooms in water, but this is optional. You can use mushrooms of your choice).
Step 2
Cut the pork meat into thin strips. Transfer them into a bowl and marinate with 2 tbsp soy sauce, 1 tbsp brown sugar, 1/2 crushed garlic, and 1 tsp ginger. Set it aside.
Step 3
Prepare the veggies. Cut carrot and scallions into thin strips. Slice onion and chives.
Step 4
Stir-fry the veggies separately. Make sure to wipe the pan with a tissue after each session to avoid mixing the flavors.
Step 5
Bring water to a boil and put in the spinach leaves-Cook for 15 seconds. Remove leaves from boiling water and transfer them to a bowl of ice water. Drain and squeeze any remaining water out with your hands. Transfer the spinach to a bowl and add a dash of salt.
Step 6
Bring water to a boil and add 5 tbsp soy sauce, 2 tbsp sesame oil, and 2 tbsp sugar. Add the glass noodles and reduce the water until evaporated. Make sure to make a noodle taste check at a time. It should feel slightly overcooked.
Step 7
Mix the noodles, the veggies, and the meat in a large bowl. Make a taste test and add soy sauce to your liking. Sprinkle some sesame seeds and serve with rice and kimchi.
