Tried coming up with a pun but my thoughts were too jumbled(laya?). Anyways all puns aside, this recipe was so good and so easy, would definitely recommend trying it!

Ingredients

2 Tbspolive oil
1chicken breast

2 cansgreen chilies
1can fired roasted diced tomatoes
1 stalkcelery
1sweet onion
1red bell pepper
3roma tomatoes
1 Tbspcumin
garlic powder
paprika
1 tspcayenne
yellow mustard powder
3bay leaves
1 packAndouille sausage
0.5 packfrozen shrimp
medium
16 ozrice
chimichurri or Peruvian style
Instructions
Step 1
Dice the onion, red bell pepper, celery, tomatoes, and chicken.
Step 2
Bring a cast iron to low heat. Add the onion, bell pepper, celery, chicken, green chilies, can of tomatoes, and spices. Simmer on low for 1.5-3 hours.
Step 3
Slice and add the sausage 30 min before serving.
Step 4
Add the frozen shrimp 5-10 mins before serving.
Step 5
Microwave the rice.
Step 6
Ladle the jambalaya over the rice and enjoy!
