Instructions
Step 1
Grate the chayote finely and squeeze the water out.
Step 2
In a food processor, add half of the chicken thigh along with the minced garlic, salt, sugar, stock powder, and pepper. Blend until smooth and sticky.
Step 3
Add the rest of the ingredients. Blend again.
Step 4
Brush the steamer with oil. Shape the dough with small ice cream scoop and place in the steamer.
Step 5
Tidy up the shape with forks. Pull the sides upwards, then steam for 15 minutes.
Step 6
Heat the oil. Fry the shallots, garlic then add chili. Transfer to blender then continue with frying peanuts. Once the bubbles start reducing and peanuts start popping, turn off the heat.
Step 7
Blend peanuts with garlic, shallots, chili and 1/4 of total water
Step 8
Cook the peanuts blend. Add lime leaf and palm sugar. Stir, then add water and seasoning. Cook until water reduced. Add sweet soy sauce
