Instructions
Step 1
In a measuring cup, pour 20 grams white vinegar then pour whole milk until it reaches 1.5 cups mark. Let sit for a few minutes until it separates then add 25+ grams rolled oats and let the oatmeal soften. In another bowl measure out 180 grams all purpose flour, 1 tsp baking soda, 1 tsp baking powder, quarter tsp table salt, 1 tbsp granulated sugar and mix all the dry ingredients together. Now add 2 eggs and 2 tbsp flax meal to the measuring cup of wet ingredients and whisk it all together so the eggs are combined. Melt 2 tbsp butter in the microwave and add that to the wet ingredients as well. Now pour the wet ingredients into the dry and mix just until combined.
Step 2
Heat up a stainless steel fry pan until water stays in bubbles and it becomes nonstick. Add a tsp or so coconut oil to the hot pan and then pour small pancakes (light 1/4 cup of batter). Let cook on one side for 80 seconds or until the top has developed a light film or lost it's liquid glossiness before flipping and letting cook for another 10 to 30 seconds.
