Step 1
Cook rice according to package instructions. Prepare other ingredients while rice cooks.

In a large pan, heat olive oil on medium high heat. Add garlic and onion. Cook until translucent, about 3-5 minutes.

Add ground beef and break up into bits. Cook until mostly browned.

Add red bell pepper and cook for 1-2 minutes.

Stir in taco seasoning, tomato paste and beef broth. Bring mixture to a boil.
