One of Brazil’s most popular recipes, Moqueca! In this version I didn’t use palm oil because I couldn’t get my hands on it, but you should!

200gcod fillet
2bell peppers
different colours
1onion
medium
1tomato
2garlic cloves
cilantro
chives
150mlcoconut milk
1chili
salt
pepper
2 Tbspolive oil
10shrimps
Farofa
Instructions
Step 1
Start by slicing the onion, bell pepper, garlic chili and tomato in slices about ½cm thick. In a pot with 1tbsp of olive oil add half of the sliced ingredients alongside some salt. Cook for 5 minutes on medium heat
Step 2
Cut the cod fillet into cubes and layer them on top of the veggies in the pot. On top of the cod, layer the rest of the bell peppers, onion and tomato and add salt, pepper and coconut milk.
Step 3
Remove the tail and head from the shrimp and chop that into cubes as well. Layer that on top of everything with the last drizzle of olive oil (or palm oil if you have it). Cover with a lid and cook for 15 minutes

Step 4
In a pan, add olive oil and butter until melted on medium heat. Chop the garlic and Brazil nuts very finely and add them to the pan as well
Step 5
After a couple of minutes, add the manioc flour and stir well. Add the chopped chives and coriander, as well as salt, and keep stirring until it starts to toast and become a light brown
Serving
Step 6
Add some of the coriander/chive mixture to the pot as well and serve in a bowl, alongside the farofa and some white rice if you’d like
