Step 1
Step 1 Trim excess fat from chicken, then slice into thin strips and transfer to a bowl. Add soy sauce, hoisin sauce, minced ginger, sriracha and olive oil. Mix well to combine and set aside while you prepare the veggies.

Step 2 Slice cucumber, spring onions and carrots into thin matchsticks. Place carrots in a medium bowl with the rice wine vinegar and salt.

Step 3 Heat a large frypan over medium-high heat and cook chicken for 6-8 minutes, or until cooked through.
Step 4
Step 4 To assemble, fill each bao bun with chicken, cucumber, spring onion, pickled carrots and coriander. Serve with lime wedges, chilli and peanuts.
