Instructions
Step 1
Boil quinoa 10 - 12 minutes until done. Drain and cool with cold water. Dice the peppers and onion. Drain and rinse the black beans and corn. Drain the water from the onions.
Step 2
Place all the salad ingredients into serving dish.
Step 3
Mix together the dressing ingredients until combined.
Step 4
Pour all the dressing over the salad stir to combine and enjoy.
