Step 1
finely chop garlic
Step 2
finely chop onion
Step 3
fry garlic and onions in saucepan on high heat with a splash of olive oil for 5 minutes until soft
Step 4
cut up halloumi into slices and add to saucepan with garlic and onions
Step 5
cut up pepper into slices and add to saucepan, fry everything together for about 10 minutes, whilst stirring occasionally, you may need more oil.
Step 6
then add tube of tomato puree and spices and mix together whilst frying for a further 5 minutes
Step 7
serve with tortilla wraps and cottage cheese (or sour cream or creme fraiche) and enjoy
