Instructions

Step 1
Blanch the spinach leaves in boiling water for 2-3 minutes, then drain and run under cold water to stop the cooking process. This will help retain the vibrant green color. Blend the spinach in a food processor to a puree. Set aside.
Step 2
Heat 1 tablespoon of oil or ghee in a pan. Add the paneer cubes and sauté until they turn slightly golden. Remove the paneer cubes and set them aside.
Step 3
In the same pan, add the remaining oil or ghee. Add the cumin seeds and let them crackle.
Step 4
Add the chopped onions to the pan and sauté until they become translucent.
Step 5
Add the minced garlic and grated ginger to the pan and sauté for another 2 minutes. If you want to use green chilies, you can add them now, but for a non-spicy version, just skip them.
Step 6
Add the turmeric powder, coriander powder, and salt to the pan. Stir well and cook for another minute.
Step 7
Add the pureed spinach to the pan and mix well. You can add a bit of water if it's too thick.
Step 8
Cook the spinach mixture on medium heat for 10 minutes, stirring occasionally.
Step 9
If you want your Saag Paneer to be creamy, stir in the heavy cream or yogurt at this point.
Step 10
Add the sautéed paneer cubes to the spinach mixture and mix gently, ensuring the paneer is well coated with the spinach mixture. Cook for another 5 minutes.
