Ingredients
4 servings
2.2 lbsmutton
2.2 lbstomatoes
1 ½ TbspGinger garlic paste
salt
according to taste
½ tspRed chili powder
1 tspchili flakes
½ tspBlack Pepper
1 ½ tspTurmeric
1 Tbspcoriander
Roasted, crushed
1 Tspcumin
Roasted, crushed
1 inchGinger
julienne cut
10Fresh green chillies
2 TspLemon juice
optional
½ cupFresh coriander
1 cupOil
ghee as desired
Instructions
Step 1
Cut each tomato in 8 pieces
Step 2
Take a big wok, put mutton, tomatoes, ginger garlic paste and salt
Step 3
Cover and cook until mutton becomes almost tender.
Step 4
Check in between , if your mutton is not tender add little bit of water, don't add water initially as tomatoes have lots of water
Step 5
Now turn the flame high and break the tomatoes with spoon and cook until water almost dries.
Step 6
Now add red chilli powder, chilli flakes, haldi, bhuna pisa dhanya, bhuna pisa zeera, black pepper powder, julienne cut ginger.

Mix well.
Step 8
Now add oil gradually.

Thora Thora oil daalti jaiye aur high flame par 5-10 mins tak acchi tarah bhooniye .
Step 10
(if you like dry karahi, Paani poori tarah dry kar lejiye, if you like masala Thora sa Paani add kar lejiye )
Step 11
Now make the flame slow , Add little bit more julienne cut ginger, fresh green chillies , lemon juice ( optional ) , lots of Hara dhanya and keep it on dam.

Your Dhaba karahi is ready
