Instructions

Step 1
Mix egg and buttermilk in a large bowl
Step 2
Place all chicken in the buttermilk and egg mixture. Making sure all pieces are covered. Cover and place in the fridge for at least 30 minutes, do not exceed 24 hours. The chicken will become mushy after 24 in the buttermilk.
Step 3
Mix the 11 herbs and spices with the flour in a large bowl. Ensure that all spices are mixed through out the flour.
Step 4
Remove chicken from the buttermilk, and allow the excess liquid to drip off into the bowl. Place chicken on a paper towel and pat dry.
Step 5
Coat each piece of chicken in the flour mixture, Patting the flour into the chicken skin. Once coated, let the chicken rest for 15 mins on a wire rack.
Step 6
* For a crisper/thicker coating, repeat steps 4 and 5. ( after resting for 15 minutes, place back in the buttermilk and coat in flour a 2nd time).
Step 7
Heat a neutral-flavored oil. I used corn oil for this step. Any oil that can withstand high temps is ok.
Step 8
Add chicken to the oil. Be careful not to add too many pieces, which can cool down the oil. Larger chicken pieces should be fried for 15-20 minutes each.

Remove the chicken from the oil and place it on a paper towel to cool.
