Saucy Miso Potatoes

Umami rich potatoes that are sure to impress everyone! This recipe is quite easy. You simply sauté your potatoes in some fresh garlic and butter before letting them stew in your miso based sauce. They cook in about 20 minutes and can be enjoyed as a side dish or as a main dish! I’m a big fan of potato as the main course ☺️ You can top them with mozzarella cheese for some extra cheesiness as well!

Sauce:
2 Tbspmiso paste
awase
½ Tbspsoy sauce
1 Tbsphoney
½ tspblack pepper
⅓ cupbroth
mushroom, dashi, chicken etc

Instructions
Step 1
In a separate bowl, mix together miso paste, soy sauce, honey, black pepper and your choice of broth. I used mushroom stock. Set this aside.
Step 2
In a pan (with a lid), add your mini potatoes and depending on your pan size- add enough water until it reaches the halfway point of the potatoes.
Step 3
Cover with a lid and steam the potatoes over medium low heat until they are fork tender and all the water has evaporated. If the water evaporates before the potatoes are tender then add more water and repeat the process.
Step 4
Once all of the water has evaporated and the potatoes are tender, add in the butter.
Step 5
Allow the butter to melt before adding in your minced garlic.
Step 6
Sauté the garlic over medium low heat for 60 seconds.
Step 7
Add in the miso sauce and toss the potatoes in the sauce for 60 seconds.
Step 8
Cover with a lid and allow for the sauce to cook into the potatoes for 7-8 minutes over medium low heat.
Step 9
Season with salt and pepper to taste. Garnish with green onions and enjoy.
Step 10
Optional: melt some mozzarella cheese on top of the potatoes for extra deliciousness!
