Ingredients

Roasted Vegetables
1butternut squash
small
1red bell pepper
1green bell pepper
0.5zucchini
12vine cherry tomatoes
0.5red onion
2cloves garlic
olive oil
2 sprigsfresh thyme
2 tspsmoked paprika
1 Tbsras el hanout
Falafel
3 cupsChickpeas

3 TbsFlour

1 ½ cupsvegan coconut yogurt
2 Tbsfresh mint leaves
finely chopped
5cucumber
remove seeds and medium chop
1 tsppaprika
olive oil
1 Tbsfresh lemon juice

drizzle olive oil and sprinkle with spice and seasoning
Step 3

Bake at 350 degrees for 45 minutes
Tzatziki

Deseed and medium chop cucumber and add to yogurt

Add lemon juice to yogurt
Step 7

Add a drizzle of olive oil, the paprika and stir.

refrigerate Tzatziki before serving

Add yogurt and stir into dough

Knead dough, then cover with a damp towel over the bowl and rest on the counter for 1 hour.
Step 12

Roll into a log and cut into 8 to 10 equal pieces.

Roll into bagette and cut into 8 to 10 equal pieces
Step 14

Roll out into thin flatbread pancakes
Step 15

Cook over a hot, preheated pan with chili oil until browned and slightly bubbling on the top side.
Step 16

Flip and brown the other side. There should be a crackling sound when the heated pan sizzles the new bread pancakes.

Add roasted vegetables over the flatbread.

Add falafels over top of vegetables
