Instructions
Step 1
Heat oven to 220°C.
Step 2
Chop sweet potato and pepper into chunks and roast in oven for 20-25mins


Step 3
Cook rice in rice cooker

Step 4
Fry kidney beans for 1 minute with garlic and Cajun spices in a large pan.



Step 5
Add chopped tomatoes, water, sugar and the vegetable stock cube and reduce for 6-8 minutes




Step 6
Add the roast vegetables to the stew and stir to combine. Remove from the heat.
Step 7
Add half the chopped coriander to the Greek yogurt.


Step 8
Stir the other half of the chopped coriander through the cooked rice.


Step 9
Serve and enjoy
