Its very similar to my other gluten free oatmeal chocolate chip cookie recipe however, this one omits the refined sugars and when cooled is a bit of a softer cookie.

Step 1
Cream together the butter, coconut sugar, maple syrup, and coconut oil in a stand mixer with the paddle attachment.

Scrape down your bowl and add in the egg. Mix until combined.

Add in the vanilla, flour, oats, baking soda, baking powder, cinnamon, and salt. Mix until just combined.

Step 4
Fold in the chocolate chips.

Scoop on to a parchment lined baking tray and bake at 350F for 10-12 minutes.
