Chicken Katsu is a classic Japanese dish, packed full of flavor. This recipe will allow you to create a heart healthy recipe that is also paleo, making you feel good about your life choices! You can even multiply the ingredients for the paleo worcestershire sauce, keeping it on hand for other recipes. This recipe also goes great with my paleo cauliflower fried rice. Instructions

Step 1
Start by making the paleo worcestershire sauce. In a blender, combine distilled vinegar, 1 Tbl. coconut aminos, 1 Tbl. sugar free maple syrup, anchovy paste, garlic powder, onion powder and ground cloves. Reserve three tablespoons for the katsu sauce, and save the rest for another application.
Step 2
Make the katsu sauce by combining the three tablespoons of paleo worcestershire with tomato sauce, 1 Tbl. coconut aminos, 2 Tbl. sugar free maple syrup, dijon and 1 clove grated garlic. You can heat this up a bit and reduce for a thicker sauce, or you can simply enjoy it as is.
Step 3
Heat Air Fryer to 380. Prepare the chicken by combining the eggs with the 1/2 tsp. coconut aminos. Mix very well, until little to no white is remaining in the eggs. In another bowl, place the cassava flour. Coat the chicken in the eggs, and then cassava flour. Place in air fryer, and cook for 12 minutes. Flip, and then cook for an additional 7 minutes or until internal temperature of chicken reaches 165.
Step 4
To plate, place 2 pieces of chicken on each plate, and either drizzle with the katsu, or place in small serving bowls for guests or family members to dip themselves.
