Sun butter energy balls

Lovely school friendly energy balls using sun butter as a nut free option. Lots of goodness in these and pretty low carb, very low sugar. Make raspberry chia jam by simmering a cup of real berries for a few mins and adding a little maple Syrup then mixing with chia seeds - set aside to thicken. 3 tablespoons can be used in this recipe for fruity balls! If you like you can make different flavours such as a raisin and cinnamon or choc chip.

Instructions

1. In a medium-sized bowl, combine oats, sunflower seeds, and SunButter and mix well to combine. The mixture will be moist, too sticky, nor too dry. 2. Depending on what flavor bites you'd like to make, mix in your & 3. Form the mixture into 1-inch balls, pressing the mixture togethe palm of your hand. Repeat until all the oat mixture is rolled into (you should get about 24 bites). Freeze for at least 20 minutes, overnight. Enjov!
