Jeremy’s Taco Hot Sauce

This is a classic taco sauce featuring roasted jalapeños, garlic and cumin. I like to kick up the heat a little bit by adding a dried habanero pepper, but you can leave that out for a milder sauce or go hotter with a ghost or Reaper pepper as well.

Instructions
Step 1
Remove stems and seeds from roasted jalapeños and dried habanero.
Step 2
Add all ingredients to a non-reactive saucepan and bring to a boil.
Step 3
Transfer to a blender (or use an immersion blender) and purée.
Step 4
Run purée through a strainer to remove large chunks or seeds (optional)
Step 5
Return to boil and then reduce heat and simmer for 30 minutes.
Step 6
Using funnel, bottle sauce into sanitized bottles or jars. If using bottles, leave 1” headspace, cap and invert until cool. If using jars, leave 1/2” headspace and process using hot water bath for 12 minutes. If not processing, keep in refrigerator.
