1 Preheat oven to broil on high and position the rack in the upper third of the oven.

2 Wash and dry the fresh produce.

2 lb sweet potatoes

3 Peel and coarsely grate the sweet potatoes.

4 Preheat a large ovenproof skillet over medium heat.

5 Peel and mince garlic.

6 When the skillet is hot, add oil and swirl to coat the bottom.

7 Add sweet potatoes, garlic, salt, and pepper to the skillet and fry, stirring occasionally, until softened, about 5 minutes.

8 Meanwhile, grate cheese.

9 Peel and thinly slice the onion into rounds.

10 Using the back of a spoon, press the sweet potato mixture into an even layer. Place skillet in the oven and broil until starting to brown, 5-7 minutes.

11 Meanwhile, seed and thinly slice the pepper into rounds. Thinly slice olives.

12 Remove skillet from oven and top with tomato sauce, oregano, cheese, and veggies.

13 Return skillet to oven and broil until the cheese is melted and golden, about 5 minutes. (The sweet potato crust will remain soft, enjoy this pizza with a fork and knife.)
