Vegan Birria Tacos (no dried chiles)
I couldn’t ever find the right dried chilies at the store and I’ve been wanting to make Birria tacos SO bad! So, here’s my vegan version with no dried chilies! Please try it out!!

Instructions
Step 1
Sauté half an onion, two tomatoes, and loads of garlic over medium heat. Season with all the seasonings listed in the ingredients except fresh cilantro.
Step 2
Once veggies are cooked, add four cups of water and two bouillon cubes. Let simmer until onion is very soft.
Step 3
Take out bay leaves. Then add everything to a blender including half a can of chipotle peppers in adobo.
Step 4
Strain your sauce with preferably a cheese cloth (I used a standard strainer) into the crock pot. Now is the time to taste your sauce and adjust seasonings.
Step 5
Cook on low for 4 hours, add beyond steak towards the last 30 min.
Step 6
Once it’s done, dip your tortillas in the sauce and add them to a pan with oil on medium heat. Assemble your tacos with the steak and add cheese. Fold them and fry both sides till crispy.
Step 7
Serve with a side of your sauce garnished with cilantro and onion!
