Satay Noodle Salad

Instructions

Step 1
Soak rice noodles for 10 minutes in slightly warm water. Drain when done
Step 2
In a small frying pan with a tiny bit of oil fry the curry paste and powder until fragrant. Add to a bowl when done
Step 3
Add peanut butter to the curry paste and add the coconut milk ( in small additions to keep it smooth) add the rest of the ingredients (excluding cucumber and noodles) and mix
Step 4
Add boiling water to the rice noodles and leave for 2 minutes. Drain and run under cold water to cool
Step 5
Mix the noodles with the sauce and add to a bowl. Add the sliced cucumber and the chicken and top with sesame seeds
