Tofu, Chive and Mushroom Wontons 🥟

Instructions

Step 1
Heating some some oil in a large frypan or wok - add ginger, shiitake mushroom and crumbled tofu. Cook for a minute until fragrant before adding your chopped Chinese chives. The mixture has a lot of moisture in it so we want to spend a while cooking it out. Add the cornstarch to help bind the mix, then vegetarian oyster sauce, sesame oil and salt and pepper to season. Take your mix off the heat and I like to spread mine out onto a large plate to cool down faster. You want to make sure your filling is cooled completely before wrapping.
Step 2
Wrap all your wontons up. You can freeze some at this point - be sure to make sure they are spaced out on a tray when freezing so they dont stick together - once frozen you can bundle them into a smaller bag to save freezer space.
Step 3
To cook - bring a large pot of water to the boil and boil for 3-4 minutes. I like to serve mine with Chinese black vinegar and soy sauce and finish it with my homemade garlic and sesame chilli crisp (recipe also on my Whisk profile!)
