Instructions

Step 1
In a large bowl, add flour, salt, and baking soda. Stir until combined. Add shortening and cut in with a fork or pastry cutter. Add milk and stir until a shaggy dough forms
Step 2
On a floured surface roll dough until ¼ inch thick and cut into 1” squares
Step 3
Place dumplings in a parchment lined baking sheet, dust with additional flour so they do not stick together, and set aside.
Step 4
In a large pot add onion, celery, carrots, chicken, salt, pepper, poultry seasoning, and 8 cups of water. Bring to a boil. Cover with a lid, reduce heat, and simmer 2-3 hours.
Step 5
Place a fine mesh strainer over a large bowl, and strain the chicken broth. Add the strained chicken broth back to the pot and bring to a simmer.
Step 6
Add the dumplings in small batches, stirring after each batch and simmer 15 - 20 minutes. Broth with thicken as it cooks. Season with salt and pepper to taste.
Step 7
Shred the chicken thighs and add to the pot once dumpling are cooked, to warm through
