Italian pasta salad
Pasta Salad
(Recipe)
Ingredients:
- 1 box of Rotini Pasta (or any other medium size pasta of choice) boiled in salt water.
- English cucumber, chopped
- cherry/grape Tomatoes, halved/quartered
- 1 Bell Pepper, chopped
- Red Onion, finely diced (I didn't have in pasta you tried)
- sliced Black Olives
- Garlic Salt & pepper to taste
- mozzarella cheese/pepperjack
-pepperoni
Homemade Dressing:
- 1/2 cup Vegetable Oil
- (or half Olive Oil, half Vegetable Oil)
- 3 tbsp Red Wine Vinegar
- 1 tsp Dijon Mustard
- 1 tsp Honey
- 1/2 tsp Italian Seasoning
- 1/2 tsp Garlic Powder
*Can use store bought Italian.
I USE OLIVE GARDEN ITALIAN DRESSING
Instructions:
1. In a large pot, boil Pasta in salted water until al dente (firm) according to package directions. Drain and rinse under cold water to cool.
*Alternately: use Chicken Bouillon instead of Salt for added flavor.
2. In a large bowl, combine cooked and cooled Pasta, Vegetables, and Italian dressing. Toss well to coat.
3. Season with Garlic Salt to taste and gently stir in cheese
4. Refrigerate for at least 2 hours before serving to allow the flavors to blend and the Pasta to soak in the dressing.
