Instructions
Step 1
In a pan add bell pepper, chicken breast, oil, and half the packet of fajita seasoning. Cook 4-5 minutes until the chicken is done.
Step 2
Add in chicken broth and rotel. Once the liquid comes to a boil stir in the rice. Submerge all the rice under the liquid, cover, and cook on low for 7 minutes.
Step 3
Remove lid and stir in cream cheese and 1 cup of shredded cheese. Once the cheese is melted top with the remaining shredded cheese.
Step 4
Cover for 2 minutes until the cheese melts.
